Atlas Alimenta is a global collaboration that examines food preservation across cultures. The series are offered as episodes through Amazon's Kindle App.
Proceeds from the series go toward developing the technology and outreach required for our thesis work, where international food industry experts examine the history, science and culture of traditional preservation techniques.
Our intention is to be a slow-burn change agent for the advancement of food safety and nutrition around the globe. Please contact us if you would like to know more about the project.
About the Director
Rachael Mamane is a James Beard nominated author, chef and consultant who has spent the past decade exploring ways to minimize agricultural food waste and emphasize resource access in local food systems.
Since the publication of her book, Mastering Stocks and Broths, an ethical and practical dive into the foundation of flavor, she has expanded her purview to examine food cultures around the world.
Her hope it to consolidate efforts across cultures, across borders, to explore the intersection of old world preservation and new world technology. Meanwhile, you can find her sipping mezcalitos and munching on tlayudas in Mexico.
